Alpine Chai Panna Cotta

A silky set cream dessert infused with Alpine Chai and served chilled.

Important: This recipe was created specifically for Alpine Apothecary Alpine Chai Herbal Tea. Do not substitute another tea blend. Most alternatives contain black tea and a different balance of spices, which will alter the flavour, texture and caffeine content.

Makes: 6  |  Preparation: 20 minutes, plus at least 4 hours chilling

Ingredients

• 1 tablespoon Alpine Apothecary Alpine Chai Herbal Tea
• 600 ml thickened cream
• 200 ml full-cream milk
• 80 g caster sugar
• 3 teaspoons powdered gelatine
• 3 tablespoons cold water
• 1 teaspoon vanilla extract

Method

1. Place the Alpine Apothecary Alpine Chai Herbal Tea, cream, milk and sugar in a saucepan. Heat gently until steaming, then remove from the heat and infuse for 10 minutes.
2. Sprinkle the gelatine over the cold water and leave for 5 minutes.
3. Strain the cream mixture, return it to low heat and add the softened gelatine. Stir until completely dissolved without boiling.
4. Stir in the vanilla, divide between six glasses or moulds and refrigerate for at least 4 hours.
