Butterfly Pea and Hibiscus Colour-Change Ice

Blue butterfly pea ice slowly colours a tart hibiscus drink.

Ingredients

  • 1 tsp butterfly pea flowers
  • 1 tsp dried hibiscus
  • 400 ml freshly boiled water, divided
  • 1 tbsp lemon juice
  • Sparkling water to serve

Method

  1. Steep butterfly pea in 200 ml hot water for 8 minutes; strain and pour into an ice-cube tray.
  2. Steep hibiscus separately in the remaining 200 ml water, strain and cool.
  3. Freeze the blue cubes, then serve them in glasses of cold hibiscus tea with a splash of lemon and sparkling water.
Good to know
Make the infusions fresh and freeze promptly. The colours blend as the cubes melt.
