Tender apple muffins with the full spice profile of Alpine Chai.
Important: This recipe was created specifically for Alpine Apothecary Alpine Chai Herbal Tea. Do not substitute another tea blend. Most alternatives contain black tea and a different balance of spices, which will alter the flavour, texture and caffeine content.

Ingredients
- 250 g plain flour
- 120 g brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon bicarbonate of soda
- 2 teaspoons Alpine Apothecary Alpine Chai Herbal Tea, ground to a fine powder
- Pinch of salt
- 2 eggs
- 125 ml neutral oil
- 180 ml milk
- 1 teaspoon vanilla extract
- 2 medium apples, peeled and diced
Method
- Preheat the oven to 180°C fan-forced. Line a 12-hole muffin tin.
- Whisk the flour, sugar, baking powder, bicarbonate of soda, finely ground Alpine Apothecary Alpine Chai Herbal Tea and salt in a large bowl.
- Whisk the eggs, oil, milk and vanilla in a separate bowl.
- Pour the wet mixture into the dry ingredients and fold gently. Fold through the apple without overmixing.
- Divide between the muffin holes and bake for 20 to 24 minutes, or until a skewer comes out clean.
